Ingredients

For the Rolls

  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry, cut in half
  • 1/4 cup melted butter or olive oil (for brushing)

For the Chili Honey

  • 1/4 cup honey
  • 1/2 tsp red chili flakes

Directions

  1. Prepare the Filling: Mix feta, ricotta, and thyme until smooth.
  2. Assemble the Rolls: Preheat oven to 400°F (200°C). Brush phyllo with butter/oil, add 1 tbsp filling, fold sides, and roll tightly. Repeat.
  3. Bake: Place rolls on parchment-lined sheet. Bake 15–20 minutes until golden and crispy.
  4. Make Chili Honey: Warm honey with chili flakes over low heat. Let sit to infuse.
  5. Serve: Drizzle chili honey over rolls or serve on the side. Garnish with thyme if desired.
