🍔🧀 Cheeseburger Soup – Creamy & Comforting 🍲

A hearty, cheesy soup loaded with beef, potatoes, and veggies—like a cheeseburger in a bowl!

Ingredients

  • 4 tbsp butter, divided
  • 1/2 lb lean ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup chopped celery
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 cups cubed Cheddar cheese
  • 1/4 cup sour cream

Directions

  1. Sauté Ingredients: Melt 1 tbsp butter in large pot. Add beef, onion, carrots, and celery. Cook 5–7 minutes until beef is browned.
  2. Add Seasoning & Potatoes: Stir in basil and parsley. Add potatoes and broth. Bring to boil, then simmer 10–12 minutes until potatoes are tender.
  3. Prepare Sauce: In saucepan, melt remaining 3 tbsp butter. Whisk in flour for 1 minute. Gradually whisk in milk until smooth and thickened.
  4. Combine: Stir sauce into soup pot. Bring to gentle boil, then reduce to simmer.
  5. Add Cheese & Sour Cream: Stir in Cheddar until melted. Add sour cream and heat through.
  6. Serve: Ladle into bowls. Garnish with bacon, extra cheese, or green onions if desired.
