Golden pork chops baked over creamy scalloped potatoes—hearty, comforting, and full of flavor!

Ingredients

  • 4 boneless pork chops
  • 4 cups thinly sliced potatoes (Yukon Gold or Russet)
  • 1 small onion, thinly sliced
  • 2 tbsp olive oil or butter
  • 2 cups milk or cream
  • 2 tbsp all-purpose flour
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or thyme, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Season pork chops with salt, pepper, and garlic powder. Sear in a skillet with oil until browned (3–4 minutes per side). Set aside.
  3. In the same skillet, sauté onions until soft. Stir in flour and cook for 1 minute. Add milk and whisk until thickened. Stir in cheese and season to taste.
  4. Layer sliced potatoes in the baking dish. Pour cheese sauce over potatoes and spread evenly.
  5. Place seared pork chops on top. Cover with foil and bake for 40 minutes.
  6. Remove foil and bake another 15 minutes until pork is cooked through and potatoes are tender.
  7. Garnish with fresh herbs and serve warm.
