Golden pork chops baked over creamy scalloped potatoes—hearty, comforting, and full of flavor!
Ingredients
- 4 boneless pork chops
- 4 cups thinly sliced potatoes (Yukon Gold or Russet)
- 1 small onion, thinly sliced
- 2 tbsp olive oil or butter
- 2 cups milk or cream
- 2 tbsp all-purpose flour
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh parsley or thyme, for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Season pork chops with salt, pepper, and garlic powder. Sear in a skillet with oil until browned (3–4 minutes per side). Set aside.
- In the same skillet, sauté onions until soft. Stir in flour and cook for 1 minute. Add milk and whisk until thickened. Stir in cheese and season to taste.
- Layer sliced potatoes in the baking dish. Pour cheese sauce over potatoes and spread evenly.
- Place seared pork chops on top. Cover with foil and bake for 40 minutes.
- Remove foil and bake another 15 minutes until pork is cooked through and potatoes are tender.
- Garnish with fresh herbs and serve warm.
