Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar

Cheesecake Filling

  • 16 oz cream cheese, softened (or dairy-free alternative)
  • 1/2 cup sugar
  • 2 large eggs (or 1/4 cup unsweetened applesauce)
  • 1 tsp vanilla extract

Cinnamon Swirl

  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1 tbsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk (almond or oat for dairy-free)
  • 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 325°F (165°C). Line a 9×9 inch pan with parchment paper, leaving overhang.
  2. Mix graham crumbs, melted butter, and sugar. Press into pan and bake for 10 minutes. Cool completely.
  3. Beat cream cheese and sugar until smooth. Add eggs and vanilla; mix until creamy.
  4. In a small bowl, mix melted butter, brown sugar, and cinnamon.
  5. Spread cheesecake filling over crust. Drizzle cinnamon mixture and swirl with a knife.
  6. Bake for 35–40 minutes until center is firm and edges are golden. Cool in pan, then chill for 2 hours.
  7. Whisk glaze ingredients until smooth. Drizzle over chilled bars.
  8. Lift bars using parchment, slice into squares, and enjoy!
