MELTAWAY BROWNIE COOKIES

Ingredients

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup granulated sugar
  • Pinch of salt (optional)
  • 2 eggs (optional, if needed for texture)
  • 1/2 tsp vanilla extract (optional)
  • 1/2 cup flour (optional, if batter is too loose)

Instructions

  1. Preheat oven: to 180°C (350°F). Line a baking tray with parchment paper.
  2. Melt chocolate & butter: In a heatproof bowl, melt chocolate chips and butter together over a bain-marie or in the microwave. Stir until smooth.
  3. Add sugar: Mix in granulated sugar while the mixture is still warm.
  4. Optional additions: If using, add eggs one at a time, then stir in vanilla and salt.
  5. Adjust texture: If the batter is too runny, add a bit of flour to thicken.
  6. Shape cookies: Drop spoonfuls of batter onto the tray, spacing them apart.
  7. Bake: 10–12 min until edges are set but centers remain soft.
  8. Cool: Let cookies rest on the tray for 5 min before transferring to a rack.
