Ingredients
- 2 pounds russet potatoes, cut into chunks
- 1/2 cup chopped bacon
- 1/4 cup honey
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary or thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss potato chunks with olive oil, garlic powder, rosemary, salt, and pepper.
- Spread potatoes on the baking sheet and roast for 25 minutes.
- Remove from oven, sprinkle chopped bacon over the potatoes, and drizzle with honey.
- Return to oven and roast for another 15–20 minutes, until potatoes are golden and bacon is crispy.
