For the Coconut Lime Fish
- 4 white fish fillets (cod, tilapia, or snapper)
- Salt and pepper to taste
- Zest of 1 lime
- Juice of 2 limes
- 1/2 cup coconut milk
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Fresh cilantro, chopped (for garnish)
For the Avocado Salsa
- 1 large avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely diced
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, chopped
Instructions π
Marinate the Fish
- In a shallow dish, combine lime zest, lime juice, coconut milk, olive oil, garlic, red pepper flakes, salt, and pepper.
- Add fish fillets, coat well, cover, and marinate for 15β20 minutes.
Prepare the Avocado Salsa
- In a bowl, combine avocado, cherry tomatoes, red onion, lime juice, salt, pepper, and cilantro.
- Gently toss until mixed. Set aside.
Cook the Fish
- Heat a skillet over medium heat. Remove fish from marinade and shake off excess.
- Cook fillets 3β4 minutes per side, until opaque and flaky.
Serve
- Plate fish and top with avocado salsa.
- Garnish with extra cilantro and lime wedges if desired.
