A decadent fusion of cheesecake and Boston cream pie—layers of chocolate, pastry cream, and creamy cheesecake!

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup dark chocolate, melted

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup sour cream

For the Pastry Cream Layer

  • 1 cup whole milk
  • ¼ cup granulated sugar
  • 2 egg yolks
  • 1 tablespoon cornstarch
  • ½ teaspoon vanilla extract
  • 1 tablespoon unsalted butter

For the Chocolate Ganache

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream

Instructions

Prepare the Crust

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs with melted butter and dark chocolate.
  3. Press into a 9-inch springform pan.
  4. Bake for 10 minutes, then cool.

Make the Cheesecake Filling

  1. Beat cream cheese, sugar, and vanilla until smooth.
  2. Add eggs one at a time, mixing well.
  3. Mix in sour cream.
  4. Pour over crust and bake for 45–50 minutes.
  5. Let cool, then refrigerate for 4 hours.

Prepare the Pastry Cream

  1. Heat milk and sugar in a saucepan.
  2. Whisk egg yolks with cornstarch, then slowly add hot milk while stirring.
  3. Return to heat and whisk until thickened.
  4. Stir in vanilla and butter. Cool completely.

Assemble the Layers

  1. Spread pastry cream over chilled cheesecake.
  2. Refrigerate for 30 minutes.

Make the Ganache

  1. Heat heavy cream and pour over chocolate chips.
  2. Stir until smooth, then spread over cheesecake.

Chill & Serve

  1. Refrigerate for 1 hour before slicing.
  2. Serve chilled and enjoy!
