Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 1/2 lb bacon, chopped
  • 1/2 lb breakfast sausage or Italian sausage, crumbled
  • 1 small onion, finely chopped
  • 1 cup cheddar cheese, shredded
  • 1/4 cup sour cream
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Prepare the Potatoes: Boil cubed potatoes until tender. Drain and mash with butter, milk, sour cream, salt, and pepper until smooth.
  2. Cook the Meats: In a skillet, cook bacon until crispy. Remove and drain. In the same skillet, cook sausage and onion until browned.
  3. Combine: Mix mashed potatoes with bacon, sausage, onion, and cheddar cheese until well combined.
  4. Shape the Loaf: Transfer mixture into a greased loaf pan. Smooth the top and sprinkle with breadcrumbs if desired.
  5. Bake: Bake at 375°F (190°C) for 25–30 minutes, until golden and set.
  6. Serve: Garnish with fresh parsley. Slice and serve warm.
