White Chocolate Cranberry Nut Bread 🍫🍞
Soft, buttery loaf studded with tart cranberries, crunchy pecans and pistachios, plus sweet white chocolate chips.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1/4 cup chopped pistachios
- 1/2 cup white chocolate chips
Instructions
- Preheat: Heat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Dry mix: Whisk flour, baking powder, and salt in a bowl.
- Cream: In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
- Combine: Gradually add dry ingredients to wet, mixing just until smooth.
- Fold-ins: Stir in cranberries, pecans, pistachios, and white chocolate chips.
- Bake: Pour into pan and bake 55–60 minutes, until a toothpick comes out clean.
- Cool: Let cool in pan 10 minutes, then transfer to a wire rack to cool completely.
