Ingredients

  • 2 cups basmati rice
  • 1/4 cup slivered almonds
  • 1/4 cup pistachios
  • 1/4 cup raisins
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup orange zest
  • 1/2 tsp saffron threads
  • 2 tbsp butter
  • 1 tsp ground cinnamon
  • Salt to taste

Directions

  1. Rinse & soak: Rinse rice until water runs clear. Soak for 30 minutes.
  2. Cook rice: Boil in salted water until al dente. Drain and set aside.
  3. Toast nuts: Melt butter in a large pan. Add almonds and pistachios, toast until golden.
  4. Add fruits & zest: Stir in raisins, apricots, cranberries, and orange zest. Cook until fragrant.
  5. Combine: Add cooked rice, saffron, cinnamon, and salt. Mix gently to combine.
  6. Steam: Cover and cook on low heat for 10 minutes to meld flavors.
  7. Serve: Fluff with a fork and enjoy warm.
