Ingredients
- 2 lbs large shrimp, peeled and deveined
- 20 oz refrigerated three-cheese tortellini
- 1 tbsp olive oil
- 8 tbsp unsalted butter, divided
- 2 tbsp minced garlic
- 1 tbsp all-purpose flour
- 6 oz seafood or chicken broth
- 4 oz cream cheese, softened
- 2 cups heavy cream
- 1 tsp dried basil
- 5 oz fresh baby spinach
- 1/4 tsp crushed red pepper flakes
- 1/2 cup freshly grated Parmesan cheese
- All-purpose seasoning for shrimp (e.g., garlic & herb blend, seasoning salt)
Instructions
- Season Shrimp: Toss shrimp with your all-purpose seasoning.
- Sear Shrimp: Heat olive oil in a large skillet over medium-high heat. Cook shrimp in batches 1–2 minutes per side until pink. Remove and set aside.
- Make the Sauce: Lower heat to medium. Add 6 tbsp butter and garlic, sauté 3 minutes until fragrant.
- Thicken Sauce: Stir in flour until smooth. Slowly whisk in broth, then add cream cheese. Stir until creamy.
- Add Cream & Basil: Pour in heavy cream and add dried basil. Simmer 5–7 minutes, stirring until thickened.
- Cook Tortellini: Prepare as directed on package. Drain and set aside.
- Combine & Serve: Stir spinach into sauce until wilted. Add red pepper flakes and Parmesan, stir until melted. Adjust seasoning with salt.
- Bring it Together: Add tortellini and shrimp to sauce, stir gently to coat. Serve warm.
