Ingredients

  • 1.5 lbs stewing beef, cubed
  • 2 tbsp flour
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 stalks celery, chopped
  • 14 oz can diced tomatoes
  • 4 cups beef broth
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 4 round bread loaves
  • Butter for brushing (optional)

Instructions

  1. Brown beef: Toss beef cubes with flour, salt, and pepper. Brown in oil over medium-high heat. Remove from pot.
  2. Sauté aromatics: Add chopped onion and garlic to pot. Cook until softened. Return beef to pot.
  3. Add vegetables & broth: Stir in carrots, potatoes, celery, diced tomatoes, beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf.
  4. Simmer: Cover and simmer for 1.5 to 2 hours until beef is tender. Add peas during the last 10 minutes.
  5. Prepare bread bowls: Cut tops off bread loaves and hollow out, leaving a 1/2-inch shell. Toast in a 350°F (175°C) oven for 5 minutes if desired.
  6. Serve: Ladle hot stew into bread bowls. Garnish with fresh parsley and brush edges with butter if desired.
