Chicken and Rice Crazie
Ingredients
- 4 pieces chicken thighs or breasts (boneless, skinless)
- 1 cup brown rice
- 2 cups chicken broth (or water)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- Salt and black pepper to taste
- 1 teaspoon dried oregano
- Parmesan cheese, for garnish
- Fresh parsley (optional), for garnish
Instructions
- Prepare the Rice: Rinse brown rice until water runs clear. Boil broth or water, add rice and salt, then simmer covered for 45–50 minutes until tender. Stir in 1 tablespoon butter.
- Cook the Chicken: Season chicken with salt, pepper, and oregano. Heat olive oil in skillet, sauté onion and garlic until fragrant. Add chicken and cook 5–7 minutes per side until golden and cooked through (165°F / 75°C). Rest before slicing.
- Assemble the Dish: Spread buttery rice in foil dish. Arrange sliced chicken on top. Sprinkle with pepper, Parmesan, and oregano.
- Serve: Serve warm, garnished with parsley if desired.
Tips
- Add peas or bell peppers to rice for extra flavor and color.
- Squeeze lemon juice over chicken before serving for zest.
