  • 1 cup fresh spinach, chopped
  • 1/2 cup jarred artichoke hearts, drained and chopped
  • 2 tbsp capers, drained
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

  1. Cook ravioli: Boil according to package instructions. Drain and reserve a splash of pasta water.
