🧂 Ingredients
For the salmon
- 4 salmon fillets (skinless)
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp fresh dill, chopped
- Salt, to taste
- Black pepper, to taste
- Paprika, to taste
For the avocado-feta topping
- 1 large avocado, diced
- 1/3 cup feta cheese, crumbled
- 1 Tbsp fresh dill, chopped
- 1 Tbsp fresh chives, sliced
- 1/2 lemon, juiced
- Salt, to taste
- Black pepper, to taste
👩🍳 Directions
- Prep oven: Preheat to 400°F (204°C). Lightly spray a baking dish with non-stick spray.
- Make topping: In a bowl, combine avocado, feta, dill, chives, lemon juice, salt, and pepper. Cover and refrigerate.
- Season salmon: Pat salmon dry and place in the dish. Mix olive oil, lemon juice, zest, and dill; brush over fillets. Season with salt, pepper, and paprika.
- Bake: Bake 10–12 minutes, until salmon flakes easily with a fork.
- Serve: Plate and spoon generous avocado-feta topping over each fillet.
