Vanilla Cream Slice
Ingredients
- 200 g digestive biscuits (or graham crackers), crushed
- 100 g melted butter
- 500 ml cold milk
- 2 packets (around 150 g) instant vanilla pudding mix
- 250 ml heavy cream (whipped)
- 200 g cream cheese (room temperature)
- 1 tsp vanilla extract
- Powdered sugar, for dusting
Instructions
- Prepare the base: Mix crushed biscuits with melted butter until evenly coated. Press firmly into the bottom of a rectangular dish (lined with parchment). Chill for 15–20 minutes.
- Make the cream layer: In a large bowl, beat cream cheese with vanilla until smooth. Add instant pudding mix and cold milk gradually, whisking until thick and creamy.
- Fold in whipped cream: Gently fold the whipped cream into the vanilla mixture until well blended and fluffy.
- Assemble: Pour the cream mixture over the chilled biscuit base, spreading evenly with a spatula.
- Chill: Refrigerate for at least 4 hours, or overnight, until firm.
- Finish & serve: Dust generously with powdered sugar, cut into neat squares, and serve chilled.
Tips
- For extra flavor, add a thin layer of fruit jam on the biscuit base before spreading the cream.
- Use vanilla bean paste instead of extract for a stronger vanilla aroma.
- Keep refrigerated — best served cold!
Optional topping: Add fresh berries or shaved white chocolate for decoration.
