Snowball Cookies (Butter Pecan Cookies)

These melt-in-your-mouth cookies are buttery, nutty, and covered in powdered sugar — perfect for holidays or any sweet craving!

Ingredients:

  • 1 cup (225 g) unsalted butter, softened
  • 1/2 cup (65 g) powdered sugar
  • 2 tsp vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 cup (120 g) finely chopped pecans (or walnuts)
  • 1/4 tsp salt
  • Extra powdered sugar for coating

Instructions:

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until smooth and creamy.
  3. Mix in vanilla extract.
  4. Add flour and salt, stirring until just combined.
  5. Fold in chopped pecans.
  6. Roll dough into small 1-inch balls and place them on the prepared baking sheet.
  7. Bake for 12–15 minutes, or until the bottoms are lightly golden (tops should stay pale).
  8. Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.
  9. Once completely cool, roll them again in powdered sugar for a perfect snowy coating.

Storage:

Store in an airtight container for up to a week. They also freeze beautifully!
