Ingredients:
- 1 jar dill pickles (sliced into chips and patted dry)
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 large eggs
- 1 cup buttermilk (or regular milk with a splash of vinegar)
- 1 1/2 cups breadcrumbs or cornmeal
- Vegetable oil for frying
Instructions:
- Drain and pat the pickle slices dry using paper towels.
- In a shallow bowl, mix flour, paprika, garlic powder, cayenne, salt, and pepper.
- In another bowl, whisk together eggs and buttermilk.
- Place breadcrumbs (or cornmeal) in a third bowl.
- Dip each pickle slice first into the flour mixture, then the egg mixture, and finally coat with breadcrumbs.
- Heat oil in a deep pan over medium heat (about 175°C / 350°F).
- Fry the pickles in batches until golden brown and crispy, about 2–3 minutes per side.
- Remove and place on paper towels to drain excess oil.
- Serve hot with ranch or spicy mayo dipping sauce!
Tips:
- Make sure pickles are dry before coating for maximum crispiness.
- You can bake them at 200°C (400°F) for a lighter version — just spray with oil and bake 15–20 minutes.
