Ingredients
- 2 sheets puff pastry (thawed if frozen)
 - 300g fresh spinach (or frozen, thawed and drained)
 - 200g ricotta cheese (or cottage cheese)
 - 100g feta cheese (crumbled)
 - 1 small onion (finely chopped)
 - 2 cloves garlic (minced)
 - 2 tablespoons olive oil
 - 1 egg (for filling)
 - 1 egg yolk (for brushing on top)
 - 1 tablespoon sesame seeds (optional, for topping)
 - Salt & black pepper to taste
 
Instructions
- Preheat oven to 190°C (375°F) and line a baking tray with parchment paper.
 - In a skillet, heat olive oil and sauté onion and garlic until soft.
 - Add spinach and cook until wilted (or until liquid evaporates if using frozen spinach). Let it cool slightly.
 - In a bowl, combine spinach, ricotta, feta, egg, salt, and black pepper. Mix well.
 - Place one puff pastry sheet on the baking tray and spread the spinach-cheese filling evenly on top.
 - Cover with the second puff pastry sheet and press the edges with a fork to seal.
 - Brush the top with egg yolk, sprinkle with sesame seeds, and score lightly with a knife to mark squares (for easy cutting later).
 - Bake for 25–30 minutes until golden and puffed.
 - Let cool slightly, cut into squares, and serve warm.
